Spicy Turkey Wrap with Fresh Garden Greens

1 whole wheat tortilla or wrap

2 jalepeño stiffed green olives, sliced

1/2 garden radish, sliced

handful of garden spinach

handful of garden arugula

3-4 slices smoked turkey breast

1 tsp brown mustard

A few dashes hot sauce

 

Chop the turkey slices into small bits, put in a bowl. Mix in the mustard and the hot sauce with a fork. Wrap it all up and enjoy!

Aromatic Beet Roast

Clean beets, prepare bed of kosher salt in roasting pan (cover bottom of pan), add some fennel seeds, black pepper corns, juniper berries (a small palmful, about 15-20 each) and a couple sprigs of thyme and rosemary. Place beets on bed of salt and herbs and cover tightly with foil. Roast at 375 for 45 minutes to an hour. You can peel easily after if desired. And the aroma is intoxicating.

Roasted Beets with Goat Cheese

Ingredients: Beets, carrots, goat cheese, pine nuts or walnuts (optional), honey, salt, pepper, olive oil, fresh thyme.

Lots of different ways to do this recipe - as long as the beets get roasted and the honey and goat cheese melt well together, then you're all set.

Layer peeled & halved beets and sliced carrots in a baking dish. drizzle olive oil over the vegetables and then add salt and pepper. Add slices of goat cheese on top, and then drizzle honey over the entire dish. 

Bake in the oven, covered with a sheet of foil, for about 30 minutes. Then add pine nuts or walnuts if desired and bake uncovered for about 10-15 minutes or until the nuts are toasted but not burned.  

Garnish with fresh thyme - enjoy!
